Serve with warm refried beans and carrot and celery sticks on the side
Yield: 4 snack or appetizer servings

| 4 | (7 - 8 inch) flour tortillas or flavored flour tortillas | ||

| 1 1/4 | cups | (5 oz.) shredded Cheddar Cheese, divided | |

| 4 | Tablespoons | thick and chunky salsa, divided | |
|
|
|||
| 2 | Tablespoons | thinly sliced green onions or chopped cilantro, divided | |
|
|
|||
| 2 | Tablespoon | sour cream or guacamole | |
|
|
|||
Melt 1 teaspoon of the butter in a large non-stick skillet over medium-high heat. Place one tortilla in skillet; sprinkle 1/2 cup cheese evenly over tortilla and top with 2 tablespoons salsa, 1 tablespoon green onions and another tortilla. Reduce heat to medium; cook 3 to 4 minutes or until bottom tortilla is browned.
Turn quesadilla over; top with 2 tablespoons cheese. Cover; cook about 3 minutes or until bottom tortilla is browned and cheese is melted. Transfer to carving board; cut into four wedges. Repeat with remaining ingredients.
Serve quesadillas warm or at room temperature with remaining salsa and sour cream.
Lighter Options:
* Use fat free or light sour cream.
* Use Light Shredded Cheddar Cheese adding 2 tablespoons of cheese to top of each quesadilla during the last 1 minute of cooking.
