Grilled Chicken Caesar Rice Salad

Yield: 6 servings

Ingredients

1 pkg. (7.2 oz.) Rice-A-Roni Rice Pilaf
1 tablespoon olive oil or vegetable oil
1 pkg. (10 oz.) frozen peas
2 medium carrots, cut into small thin strips
1 cup sliced mushrooms or celery
1 cup sliced zucchini or cucumber
2/3 cup regular or reduced calorie Caesar salad dressing
5 boneless, skinless chicken breast halves
4 1/2 cups shredded romaine lettuce
Seasoned croutons, optional

Directions:

Prepare Rice-A-Roni according to package directions, substituting oil for margarine. Stir in peas, carrots, mushrooms, zucchini and 1/2 cup dressing. Chill 4 hours or overnight.

About 30 minutes before serving, brush chicken with remaining salad dressing. Grill over medium coals about 10 minutes, turning once. Cut into strips.

Place 3/4 cup lettuce on each plate. Stir rice salad; top lettuce with rice salad and warm chicken strips. Garnish with croutons, if desired and a lemon slice and sprig of fresh parsley.
