A classic comfort food takes on a delicious new twist!
Yield: Serves 6

| 1 | medium green pepper, diced, divided | ||

| 1 | medium onion, diced, divided | ||

| 1 | large egg | ||
|
|
|||
| 1/4 | cup | bread crumbs | |
|

| 1/4 | teaspoon | salt | |
|
|
|||
| 1/4 | teaspoon | pepper | |
|
|
|||
| 1 | clove | garlic, minced | |
|
|
|||
| 1/2 | lb. | cooked ham slices | |
|
|
|||
| 1/2 | lb. | Swiss cheese slices | |
|
|

In a large bowl mix together ground beef, 1/2 the green pepper, 1/2 the onion, egg, bread crumbs, salt, pepper and minced garlic. Flatten mixture out onto a piece of waxed paper.
On top of the meat mixture, place ham slices, cheese slices, and remaining pepper and onion. Roll entire meatloaf like you would a jelly roll, making sure all seams and ends are sealed. Place into a 9" x 13" pan and spread ketchup over the top of the meatloaf.
Bake at 350 F. to 375 F. for 1 hour or until thermometer registers 160 F. Let stand for 5 to 10 minutes before slicing.
