Thai-Style Tuna and Fruit Salad

Ingredients

8 leaves iceberg lettuce
1 bag (10 oz.) romaine lettuce
2 Tablespoons chopped fresh cilantro
2 Tablespoons chopped fresh mint leaves
1 can (6 oz.) white albacore tuna, drained and chunked
1/3 cup sliced cucumber
1/3 cup drained mandarin oranges
1/3 cup red seedless grapes, cut in half
1/4 cup thinly sliced red onion
Sweet Sour Spicy Dressing:
1 lime
3 cloves garlic
2 serrano chiles, halved, seeded and cut into pieces
1/4 cup lime juice
1-1/2 Tablespoons low-sodium soy sauce or nam pla (fish sauce)
1 Tablespoon granulated sugar
Garnish:
1/3 cup chopped cashews or peanuts

Directions:

On platter, arrange iceberg lettuce as a base for the salad. Pour romaine lettuce over lettuce on platter. Sprinkle cilantro and mint over lettuce. Arrange tuna, cucumber, oranges, grapes and onion on platter. Refrigerate, covered, while preparing dressing.

Dressing:
Peel 1/2 of lime with vegetable peeler. Place peel in blender or small food processer, add garlic, chiles, lime juice, soy sauce and sugar. Process until mixture is blended and lime peel, garlic and chiles are finely chopped. Pour dressing over salad; sprinkle with cashews or peanuts.

“My husband loved this even though he is not normally one to eat fruit in his salad. I used teriyaki tuna fish and served it with some fried wonton wedges just for fun. I will be making this again; it is worth every minute of prep time. ”
