Vegetable Pasta Salad

Make a One-Dish meal by adding chicken or ham

Yield: 6 to 8 servings

Preparation Time: 12 minutes; Chill Time: 1 hr. (optional)

Ingredients

6 oz. uncooked rotini or cavatappi pasta (corkscrew shaped)
1 can (14-1/2 to 15 oz.) cut green beans, drained
1 can (11 to 15 oz.) whole kernel sweet corn
1 can (8-1/4 oz.) sliced carrots, drained
1 can (2-1/2 oz.) sliced ripe olives, drained
1 cup bottled low calorie Italian dressing
1/3 cup sliced green onion
1/3 cup diced red or green pepper
Romaine lettuce

Directions:

Cook pasta as package directs; rinse with cold water and drain well.

Combine remaining ingredients except lettuce in large bowl; toss to coat. Chill, if desired. Serve on lettuce-lined plates.
