Vegetarian Sloppy Joes

Serve with apple slices, lowfat milk and striped shortbread cookies

Yield: 4 to 6 servings

Ingredients

1 tablespoon vegetable oil
1 medium onion, chopped
1 green pepper, chopped
3 cups cooked brown rice
2 cans (15 oz.) pinto beans
1 1/2 tablespoons chili powder
3/4 cup hickory smoked barbecue sauce
4 - 6 whole grain buns

Directions:
