Moist meatloaf with a fluffy potato pillow on top

| 1 1/2 | pounds | lean ground beef | |

| 1/2 | cup | chopped onion | |
|
|
|||
| 1/2 | cup | red bell pepper, chopped | |
|
|
|||
| 1/3 | cup | tortilla chips, crushed | |
|
|
|||
| 1 | egg, slightly beaten | ||
|
|
|||
| 3 | Tablespoons | beef broth | |
|
|
|||
| 1 | Tablespoon | taco seasoning (low sodium) | |
|
|
|||
| Potato Topping: | |||
| 2 1/2 to | 3 cups | prepared mashed potatoes (19 ounces) | |
|
|
|||
| 3 | Tablespoons | from a (4 ounce) can diced green chiles, drained | |
|
|
|||
| 1/4 | cup | thinly sliced green onions | |
|
|
|||
| 3/4 | cup | shredded Mexican blend cheese | |
|
|
|||
Heat oven to 350 degrees F
In large bowl, combine ground beef, onion, bell pepper, tortilla chips, egg, broth and taco seasoning; mixing lightly but thoroughly. Shape into an 8 x 8- inch square and place on a rack in a broiler pan. Bake 65 to 70 minutes to medium (160 degrees F) doneness, until no longer pink in center and juices run clear.
Potato Topping:
in medium bowl, combine mashed potatoes, green chiles, green onion and cheese. Microwave on HIGH for 1 minute; stir. Microwave for 1 1/2 minutes longer on HIGH. Spread warm potato mixture over the top of the meatloaf. Broil 3 to 4 inches from heat for 3 to 5 minutes or until top is lightly browned; cut into 6 rectangular servings.
