Corn, Bacon and Rice Chowder

Comfort food for a chilly day

Yield: Makes 4 servings

Ingredients

1 pkg. (7.2 oz.) Rice-A-Roni Rice Pilaf
2 tablespoons margarine or butter
1 can (13 3/4 oz.) reduced sodium or regular chicken broth
1 1/2 cups frozen corn or 1 can (16 or 17 oz.) whole kernel corn, drained
1 cup milk
1 cup water
1/2 cup sliced green onions
2 slices crisply cooked bacon, crumbled

Directions:

In 3-quart saucepan, saute rice-pasta mix and margarine over medium heat, stirring frequently until pasta is lightly browned. Stir in chicken broth and contents of seasoning packet; bring to a boil over high heat. Cover; reduce heat. Simmer 8 minutes.

Stir in corn, milk, water and onions. Simmer, uncovered, 10 to 12 minutes, stirring occasionally. Stir in bacon before serving.
