Comfort food for a chilly day
Yield: Makes 4 servings
| 1 | pkg. | (7.2 oz.) Rice-A-Roni Rice Pilaf | |

| 2 | tablespoons | margarine or butter | |
|
|
|||
| 1 | can | (13 3/4 oz.) reduced sodium or regular chicken broth | |
|
|
|||
| 1 1/2 | cups | frozen corn or 1 can (16 or 17 oz.) whole kernel corn, drained | |
|
|
|||
| 1 | cup | milk | |
|
|
|||
| 1 | cup | water | |
|
|
|||
| 1/2 | cup | sliced green onions | |
|
|
|||
| 2 | slices | crisply cooked bacon, crumbled | |
|
|
|||
In 3-quart saucepan, saute rice-pasta mix and margarine over medium heat, stirring frequently until pasta is lightly browned. Stir in chicken broth and contents of seasoning packet; bring to a boil over high heat. Cover; reduce heat. Simmer 8 minutes.
Stir in corn, milk, water and onions. Simmer, uncovered, 10 to 12 minutes, stirring occasionally. Stir in bacon before serving.
